Video: Harvest Root Crops

These are parsnips.

It’s finally time to harvest root crops so that is the topic of this week’s video. In it, I harvest carrots, parsnips, beets and potatoes (with Bill’s able assistance, I might add!). You’ll get to see how each variety performed. I also explain how we store our root crops through the winter months.

I get a lot of questions about this. If your potatoes and carrots get rubbery, you’ll definitely want to see how we avoid that!

We do harvest some crops during the growing season for various dishes. But I always wait to harvest root crops until we get some hard frosts. That’s because the frosts cause the starches in the roots to convert to sugars. What a difference that makes in their flavor!

In addition to the above, I thought you’d appreciate some extra information. In the video, I included some special tips on growing root crops so that you’ll have great success with them.
